Blistered Shishito Peppers

About the Recipe

Shishitos are one of my favorite peppers to grow and are a staple in my garden. They are compact plants that produce heavy yields even in the cooler PacNW weather. They are also very easy to cook and quite the crowd pleaser.

Ingredients

  • Shishito Peppers

  • 1-2 Tbsp Canola or Avocado oil

  • Salt to taste

Preparation

Step 1:


Turn oven to high broil. While you are waiting for the oven to heat up, place the shishito peppers in a mixing bowl and toss with the canola oil and salt to taste.




Transfer the seasoned shishitos to a cookie/baking sheet and into the oven on the 2nd highest rack.



Step 2:


Broil on the first side for 3-4 minutes or until you begin to see the shishitos' skins blistering. Then remove from oven and turn over and return to oven for 2 minutes and then remove.


Step 3:


Transfer to a serving bowl and serve as soon as the peppers aren't hot to the touch. Enjoy!
