EVERGREENS AND TOMATOES
About the Recipe
This is a bold and flavorful recipe that will convert anyone into an oyster lover. It is quick and easy to make the butter compound, and is a perfect appetizer for a bbq.
Ingredients
1 stick of salted butter
2 dozen oysters - the ones pictured are Pacific Smalls which is probably the smallest size you would want to use
1 Tbsp cumin
1 Tbsp chili powder
1 Tbsp garlic powder
1/4 cup brown sugar
1/2 tsp of salt
2 Tbsp bourbon
Preparation
Step 1:
Remove butter from fridge and let soften to room temperature (give yourself 3-4 hours)
Step 2:
Combine the softened butter, cumin, chili powder, garlic powder, salt, brown sugar, and bourbon and mix together
Step 3:
Preheat grill
Step 4:
Shuck the oysters. If you do not know how to shuck oysters or need a refresher check out my blog How to Shuck an Oyster Like a Pro.
Step 5:
Spoon butter compound into each of the oyster shells.
Step 6:
Transfer oysters to grill and let grill over direct heat (turn it to med to med/high) until they are at your preferred level of doneness. This can range for me from 5-15 minutes depending on how hot the grill is. It is important to keep an eye on your grill as there can sometimes be flareups if the oyster shells tip over or butter spills out.
Step 7:
Remove from grill and let cool down for a few minutes until a safe/appropriate temperature. Then enjoy!
