About the Recipe

Easy puff pastry tomato tart with goat cheese and pesto

Ingredients

  • 2-3 beefsteak tomatoes

  • 1 package puff pastry

  • Basil

  • 1/2 cup pesto - you can use store bought or make your own

  • 3-4 ounces Goat cheese - can subsititute mozzarella

  • Salt

  • 1 egg lightly beaten for egg wash

Preparation

Step 1:


Set oven to 425. Cover baking rack with 1-2 layers of paper towels. Thinly slice tomatoes and place on the paper towels in a single layer. Sprinkle with salt and then place another layer of paper towels on top. Let sit for 15-30 minutes while the moisture is drawn out and soaked up.




Step 2:


Remove the puff pastry from the fridge and unroll onto a baking sheet. Using a butterknife lightly cut (but not all the way through) a roughly 1 inch border all around the rectangular pastry. Then 'dock' the pastry, which means to use a fork and gently poke holes in the center section (area inside of the 1 inch border). This will help the pastry to cook more evenly and let out any steam.



Step 3:


Thinly spread the pesto across the center section of the pastry and then crumble the goat cheese on top.



Step 4:


Now add the layer of tomatoes on top.Then brush the outside border of the puff pastry with the eggwash and transfer to the preheated oven.



Step 5:


Remove from the oven after 15 minutes and place on a baking rack to let cool. Once cool, top with thinly sliced basil and drizzle with olive oil (optional), then serve.
