About the Recipe

If you've met me or read my blogs by now you know I love oysters and tomatoes. I've been noodling for some time over how to bring my love of oysters and tomatoes together (without creating a basic oyster shooter), and I've finally found it. You don't need to use a green tomato variety like Green Zebra, but I fell in love with the combination for this varietal in particular due to its citrus and tangy taste. This is a perfect appetizer that requires no cooking, but will certainly impress your guests.

Ingredients

  • 1-2 dozen oyster (aim for 4-6 per oyster eating person)

  • 1/2 a shallot

  • 2-3 ounce tomato - I used one Green Zebra which is a green and yellow varietal known for its tangy, citrus flavor

  • 3 Tbsp champagne vingegar



Preparation

Step 1:


Combine shallot, champagne vinegar, and tomato in an immersion blender and blend at high speed until smooth



Step 2:

Step 3:


Spoon on your delicious mignonette and enjoy!
