Tangy Mango and Tomato Salsa

About the Recipe

Salsa is one of the easiest ways to use my tomato and onion harvest. This recipe will add an extra pop to any dish, but is also a perfect snack. I bet this would pair really nicely with a Prosecco or German Riesling ❤️

Ingredients

  • 1 Jalapeno

  • 1 Large mango

  • 1/2 Walla Walla sweet onion - can substitute for another sweet onion variety

  • 2 Heirloom beefsteak tomatoes or 4 Romas

  • 1/4 cup loosely packed cilantro leaves

  • 1 Tbsp apple cider vinegar

  • 2 Limes juiced

  • Salt to taste - I used 1/2 tsp table salt



Preparation

Step 1:


Dice up the jalapeno, mango, onion, cilantro leaves, and tomatoes and combine in a mixing bowl. Juice the limes over the bowl and add in the apple cider vinegar and salt.




Step 2:


Mix the ingredients together and set aside until ready to serve. I recommend making the salsa a few hours in advance and letting the flavors meld together before serving. Enjoy!
